Mustard Seed

Mustard seed is an annual herb that is grown as an oilseed plant or as a plant or for fodder. Of which three species are renowned for their culinary value. They are white or pale yellow mustard (Brassica hirta) and brown mustard (Brassica Juncea) along with Black mustard (Brassica Nigra). Leaves of this plant are long, alternate bristly branched and petiolate as well as hairy along both edges. The flowers are small, yellow, with four petals that are and cruciform. The seeds are 1.5-3mm.


The main processed products are the mustard powder that is used to make mayonnaise, dehydrated or dried mustard leaves and whole mustard seeds, etc. Whole mustard is utilized as a flavouring agent in Indian cooking, and ground mustard imparts flavour and consistency to Bengali seafood curries. Mustard flour contains preservatives and antioxidant properties as well as giving flavour and colour.
