Differences between sugar and jaggery

When we think of sweeteners, our minds immediately go to crystal-like refined sugar. Another sweetener is Jaggery, also known as Gur India, which our grandparents and parents would associate with. The two most common sweeteners are sugar and Jaggery. Both are made from the same source, but they have vastly different properties and benefits. They are both made from sugarcane juice but they are treated and processed differently. Both have distinct flavors and textures, but they can be used interchangeably in desserts or drinks. This is why there is always a sugar-versus-jaggery battle that can often confuse us. Let’s look at the differences between sugar & jaggery and see which is better for you.

Jaggery versus sugar

  • Sugar is different from jaggery. They are therefore made in different ways, and have distinct colors and textures. The most common form of sugar is translucent white crystals, while jaggery is a mixture of golden brown and dark brown depending on how much it has been cooked.
  • Sugar is hard, crystallized, and solid while jaggery, on the other hand, is semi-solid and softer in nature.
  • They are both made from sugarcane liquid, but they are treated differently. To remove unwanted particles from the syrup and give it a transparent and clear appearance, charcoal is used after the initial boiling. The solution becomes sugar once it has been condensed and crystalized. Jaggery, on the other side, can be treated with a sugarcane syrup. This thick paste is heated for several hours and then put in a mold to form a firm consistency.
  • Sugar undergoes a rigorous industrial process to be prepared. This causes it to lose all of its nutritional value and results in plain sucrose. Jaggery, on the other hand, retains traces of iron and fiber as well as various mineral salts.

Which is better? Sugar or Jaggery

Jaggery is a remarkable treatment for breathing disorders. The anti-allergic properties of jaggery relax and detoxify the respiratory muscles. It can also be used to treat constipation. Asthma and other breathing disorders are often caused by constipation. Your Digestion is also improved by jaggery. It is good to have a small amount after meals. Sugar has been criticized as being a source of empty calories and low nutritional value. It can cause sudden spikes in blood sugar that are not beneficial to your body. Jaggery’s antioxidants can boost your immune system and prevent you from getting sick. Jaggery is a better choice than sugar when it comes down to sugar. However, adding sugar to your diet is equivalent of adding too many calories to your body. Exceeding any amount of sugar or jaggery is harmful. It is best to eat small amounts of both sugar and ginger.
